Sticky red wine glazed wings with garden veggies and a red wine berry float
Ingredients
12-14 chicken wings (drumettes and wingettes)
2 tbps canola oil
Fresh Thyme – Garnish
Marinade for Wings
¼ cup soy sauce
2 tbsps sesame oil
6 garlic cloves (minced)
2 tbps lemon juice
4 tbps hoisin sauce
3 tbps thai chilli sauce/hot sauce (optional)
2 tbps honey
Wine Glaze
1 ¼ cup Asti Red Wine
½ cup sugar
1 tomato (diced)
2 tbps molasses
1 tsp corn starch
Veggies
1 bag California Medley – Garden Foods
2 tbsps Garlic Butter
1 tsp Onion Powder
1 tsp Garlic Powder
1 tsp Salt
Float
1 bag (4 Berries Medley) – Garden Foods
3 scoop Cherrific Cheesecake – Blue Bunny
¼ cup – ½ cup Asti Red Wine
Preparation
- Combine ingredients for marinade in a large bowl, mix thoroughly
- Place wings in a Ziploc bag and add the marinade, shake and coat well with the mixture. Refrigerate for 1 hour or overnight
- Preheat oven to 350F
- Add the 2 tbps of canola oil to a large baking pan and keep excess marinade for further basting
- After 15 mins of baking, baste wings with marinade again, and place back into oven
- Repeat after another 15 mins, and turn onto the other side to avoid sticking to the pan
- Mix corn starch with remaining ¼ cup of wine to make a slurry and add it to the wine mixture. Stir and cook for another 5 minutes
- Turn off the heat and let the glaze rest for 10 minutes
- Remove wings from the oven and place into a mixing bowl when slight cooled. Pour the red wine sticky glaze over the wings and mix to fully incorporate
- Let wings stand for 10 minutes. Garnish with fresh thyme.
Veggies
- Cut corn pieces in half and place in a large mixing bowl
- Empty veggies into mixing bowl as well, just enough for 4 servings (I averaged)
- Using a WOK, place the 2 tbps of garlic butter and when butter has melted, add the veggies and mix to coat
- Season veggies with dry seasonings and cover to allow to steam. About 5-10 mins if completely frozen
- Remove veggies and place on plate or bowl with wings.
Berry Float
- In your glass of choice, place 1 scoop of ice cream at the bottom, sprinkle a few berries and then repeat with another scoop
- Repeat this process until you have 2-3 scoops of ice cream and the corresponding layers (or how many ever scoops you want)
- Top with ¼ cup – ½ cup of wine (can put up to 1 cup if you desire).
- Place straw and enjoy! 😊
(I mixed mine together to make a milkshake and then ate the berries with a spoon haha)
