Serves 5

5 Best Dressed Jerked Chicken Sausages, sliced diagonally

1 packet Spanish rice

½ cup White wine

½ cup yellow bell peppers chopped

½ cup red bell peppers chopped

½ cup yellow onions chopped

Cilantro

1 tbsp chopped garlic

1 tbsp oil

salt and pepper to taste

Jerk Chicken Sausage Jambalaya

Preparation

In a separate pan, prepare your packet of Spanish rice as per the package directions.

After you have prepared the vegetables and sausages, add to skillet at medium heat.

Add oil and then your Jerked Chicken Sausages.

Once the sausages have browned a bit, add garlic, peppers and onions.

Add white wine to deglaze the pot and collect all the flavours.

Allow the alcohol to cook off. This should take about one minute.

Sauté for about one minute.

By now your rice should be fully cooked. Add it to the pot and mix it all together.

Season with salt and pepper to your taste.

Sprinkle with fresh cilantro.

Serve and enjoy.

Cook Time: 30 mins

You can cook the rice in your rice cooker while preparing your vegetables to save time.

You can add avocado, fried plantains, sour cream or some seafood to spice up your dish.
