- Coco-Cola No Sugar Cake with strawberries and cream: This one will take a little more effort but trust us, you won't regret a single mouthful! For the ingredients, you'll need 2 cups of all-purpose flour, 2 cups of sugar, 1 teaspoon of baking soda, 1 can of Coca-Cola No Sugar, 1/2 cup of butter, cubed, 1/2 cup of canola oil, 1/4 cup of baking cocoa, 1.5 cups of miniature marshmallows, 2 large eggs, room temperature, 1/2 cup of buttermilk, and 1 teaspoon of vanilla extract. For the topping you'll need 2 cups of sour cream, 1/2 cup of packed brown sugar, 1/2 teaspoon of vanilla extract, and 3 cups of sliced fresh strawberries. To make, preheat the oven to 350°F, grease a 13x9-inch baking pan, and in a large bowl, whisk the flour, sugar and baking soda. In a large saucepan, bring the Coca-Cola No Sugar to a boil and cook until the liquid is reduced to 1 cup. This should take about 7-9 minutes. Then stir in the butter, oil and cocoa, and return to the boil, stirring occasionally. Remove the mixture from the heat and stir in the marshmallows until melted. Add this to the flour mixture, stirring until moistened. Then in a small bowl, whisk the eggs, buttermilk, and vanilla until blended. Add this to the flour mixture, whisking constantly. Transfer the mixture to the prepared pan and bake until a toothpick inserted in the center comes out clean, which should take about 30-35 minutes. You'll need to leave this to cool completely. Meanwhile for the topping, mix the sour cream, brown sugar, and vanilla in a small bowl until smooth. To serve the cake, add the topping and chopped strawberries.
- Cherry Coca-Cola No Sugar Cake: Did someone say cherries?! For the ingredients, you'll need 1.5 cups of miniature marshmallows, 2 cups of all-purpose flour, 2 cups of sugar, 1 teaspoon of baking soda, 1 cup of butter, cubed, 1 cup of Coca-Cola No Sugar, 3 tablespoons of baking cocoa, 2 large eggs, 1/2 cup of buttermilk, 1 teaspoon vanilla extract, and 3 tablespoons of cherry flavouring. For the frosting, you'll need 3/4 cup of butter, softened, 1 cup of confectioners' sugar, 1 jar (7 ounces) of marshmallow creme, 2 tablespoons of frozen cherry-pomegranate juice concentrate, thawed, and fresh sweet cherries with stems to decorate. Preheat your oven to 350°F, line the bottoms of 2 greased 9-inch round baking pans with parchment, and grease the paper. Divide the marshmallows between the pans, then whisk the flour, sugar, and baking soda in a large bowl. In a small saucepan, combine the butter, Coca-Cola No Sugar, cherry flavouring, and cocoa, and bring to a boil, stirring occasionally. Add this to the flour mixture, stirring until moistened. In a small bowl, whisk the eggs, buttermilk, and vanilla until blended, and add this to the flour mixture, whisking constantly. Pour the mixture into your prepared pans, dividing the batter evenly. (The marshmallows will float to the top.) Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean, then cool in pans 10 minutes before removing to wire racks. Remove the paper and cool completely. For the frosting, beat the butter and confectioners' sugar in a small bowl until smooth. Beat in the marshmallow creme and juice concentrate on low speed until blended. Place one cake layer on a serving plate and spread the top with one cup of frosting. Top with the remaining cake layer and spread with the remaining frosting, then decorate using the fresh cherries.
